Ingredients

- 2 tbsp white wine vinegar
- 2 extra large eggs
- 1 avocado
- 50g feta
- 1 tsp chilli flakes
- Chopped scallions or chives
- juice ½ lemon or to taste
- 2 slices of sourdough, 7 grain or other bread
- Fresh fruit or green salad (prepare ahead)
Method:
1. In a bowl, mash together the avocado, scallions or chives, feta cheese, chili flakes, lemon juice and black pepper.
2. Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook for about 3 minutes.
3. While the eggs are cooking, toast the bread.
4. Pile the avocado and feta on the toast, then put a poached egg on top of each.
5. Enjoy the fruit or green salad
Alternate: Prepare eggs any other way desired. Toast the bread, place the avocado mash on top, then the eggs.
